This cheesy eggplant dish will make everyone wanting more.
- 1 eggplant
- ½ cup lite mayonnaise
- ⅔ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- Preheat oven to 400 degrees.
- Peel eggplant and slice ½” thick.
- Spread both sides with mayonnaise and dip in mixture of breadcrumbs and Parmesan cheese. Coat both sides well.
- Place in single layer in shallow baking dish. Bake for 20 minutes.
